Flavorful and healthy
Aneri's note: I admittedly do not know much about Barbados. But if someone wanted to gift me a trip to Barbados, all expenses paid, I would be pretty hyped.
Bajan Peas and Rice

Bajan Pigeon Peas and rice is a delightfully flavorful dish!
Ingredients:
Vegetable oil - 2 TB
Onion - 1, diced
Vegetable broth - 8 oz
Peppercorn - 5
Habanero pepper, 1 minced
Water - 3 cups
Pigeon peas - 1/2 cup, soaked overnight
White rice - 1 cup
Salt - 1 tsp
Pepper - 1/2 tsp
Thyme - 1 TB
Marjoram or Oregano - 1 TB
Chive - 1 TB
Bay leaves - 2
1. In a large pot, add oil and fry onion and habanero pepper (if using) until golden, about 7 min.
2. Add vegetable broth, 3 cups of water, bay leaves, spices, and simmer covered with the peas and rice. If using an instant pot, pressure cook for 12 minutes.
3. Add salt, pepper to taste
