A Belarusian spin on the oh-so-popular latkes
Aneri's note: Admittedly, I do not know much about Belarus. Eastern Europe is a bit of a blind spot for me. But the food is stellar!
Draniki
Difficulty level (1-10): 3
You may recognize Draniki as potato latkes. They are essentially the same, the only difference is instead of shredding the potatoes, you blend it! Super easy and a nice healthy alternative to pancakes.
Ingredients
Potato - 4, chopped and peeled
Egg - 1
Onion - 1, roughly chopped
Garlic clove - 1
Flour - 2 TB
Salt - to taste
Pepper - to taste
Oil - 1/4 cup
Sour cream for the topping
1. Combine potatoes, onion, egg, garlic, flour, salt and pepper into a food processor and grind until it forms a batter.
2. Add a bit of oil to a frying pan and add a large spoonful of the batter. Brown on each side for 3-4 min, covered with a lid.
3. Serve with sour cream and enjoy!
