Yam stew, literally!

Ragout d'igname

The Burkina Faso Ragout is a sweet and savory stew, complemented by the necessary yam flavor. Though it does typically have meat, it's not unusual to serve without hence the authentic veg version of this recipe.
Ingredients
Yams - 3 lbs
Garlic cloves - 4, minced
Ginger - 1, shredded
Onions - 2, diced
Carrots - 2, diced
Bell peppers - 2, diced
Tomatoes - 2, diced
Oil - 1/4 cup
Vegetable broth - 1 liter
Water - 1 liter
Salt
Pepper
1. In an instant pot, sauté the onions until browned. Then add garlic and ginger and stir fry.
2. Add diced carrots, bell pepper, tomato.
3. Pour 1 liter of cold water, 1 liter of broth, salt and pepper into the pot. Bring to the boil.
4. Add cubed yams.
5. Pressure cook for 25 minutes.
